Course Description: This course is designed to prepare individuals to understand the principles of nutrition and how it relates to health and wellness. The selection, preparation and care of food, and meal management are stressed. Understanding and promoting nutritional knowledge is emphasized.

1. Students will be able to identify social and psychological influences affecting food choices.
2. Students will be able to identify and describe nutrient sources and functions.
3. Students will be able to recognize the relationship between nutrition and overall wellness.
4. Students will be able to plan cost effective, nutritious, aesthetically pleasing meals using safe and sanitary food preparation practices.
5. Students will be able to apply mathematical concepts in preparing meals for large dinner parties and/or special occasions.
6. Students will be able to demonstrate creative skills in food preparation.
7. Students will be able to display proper etiquette techniques during various dining situations.
